Green Lentils and Spinach with Hard Boiled eggs

Doubled the lentils I think. Or close to it.

Next day served it with some egg noodles.

Made the  eggs in the instant pot. Set them on the rack and added a half-ish cup of water. Pressure for 5, natural release for 5, then quick release and into ice water. Super easy to peel.

Made the quick tomato sauce out of Deborah.  Added some garlic of course.

Served over pasta with sausage and Caesar salad.

Thai Turkey with Zucchini Fritters

Whole 39, pg 234. We didn't do the silly cucumber cup business. Whole pepper, mushrooms, Anaheim pepper, turkey. Used a while lot of ginger for the sauce, and cooked it all together for a few minutes at the end. Turned out pretty well.

Deborah Madison, pg 424. The fritters were pretty good, but would have been better with Bread crumbs as the recipe called for and not flax meal. Zucchini, scallions. Herbs.

Summer Tomato Soup

Deborah, pg 216.  We didn't have enough shallots so we used some onion instead.  More or less followed the recipe.  We used juicy tomatoes so we had to re-simmer it for an hour or so after passing it through the food mill.

Turned out pretty tasty with some grilled cheese sandwiches.

Indonesian Style Tempeh + Soba Slaw

Made the tempeh recipe on pg 609 from Deborah Madison, and served it with the soba slaw (http://letnacholibre.blogspot.com/2014/09/peanut-sesame-slaw-with-soba-noodles.html).

The tempeh was pretty good.  It has a very distinct texture, and the tamarind paste flavored it strongly.

Deborah, pg 302.  Yum.  Caramelized onions in butter, lentils, spinach, hard-boiled eggs.  What's not to like?

I may not have put enough cooking water in this time.  It seemed perhaps a bit dry.  But it was still pretty tasty.  Especially with easter eggs!

Green Lentils With Wine-Glazed Vegetables

Deborah Madison, pg 301.  Used extra carrots and celery, and a bit more of the rest of the stuff.  Chard.  But otherwise followed the recipe pretty much.  Served with good crusty bread.

This is really pretty good.  It's a bit of a stretch to make it two dinners.

Deborah, pg 255.  Finally, we made this again.  Potatoes, peppers, chickpeas, tomatoes.  Basically delicious.  We used fresh mint (added at the end), and a couple extra tomatoes.  It takes a while to get it all chopped up, but yummers.

Beet Risotto

Or as Julia would say, purple rice.  The standard beet risotto from Deborah.  Turned out quite good this time.
