Veggie Tacos

Roasted some potatoes. Sauteed onions with mushrooms and poblanos. Guac. Nom nom. 

Chickpea, Potato Tomato Stew

Instapot pg 40.  Added extra water which was unnecessary. Way over cooked but good. Did 6 minutes - too much.

Glorious Mac and Cheese

Standard affair. Was good. Except we left it in too long because elliot turned into a fish in the tub.

Tofu Stir-Fry

Rando veggies. Green beans. Was good
