Three Sisters Stew
Moosewood, pg 272. Mushrooms, beans, squash, bell pepper, corn. Was pretty good but seemed like it was missing something. Maybe a little spice but not sure. We used delicata squash, but maybe acorn or something else with more flavor would have helped too.

Callaloo
http://letnacholibre.blogspot.com/2013/04/callaloo.html
Note to self: use the big all-clad pot. Doubled it again mostly, but over-kaled it a bit. Still delicious. With cornbread.

Festive Black Bean Chili
Moosewood lowfat, pg 161. Black beans, corn, jar of salsa. Pretty easy and it turned out really well.

Vegetarian Feijoada
Moosewood lowfat, pg 158. Turned out pretty yummy. Put the kale in with the beans for lazyness-sake, but it still turned out just fine.

Sweet Potato and Black Bean Burritos
Moosewood low-fat, pg 172. We made enough to feed an army! More or less 1.5x the recipe, except the spices which we doubled. Turned out that was a bad idea and it was a bit too spice heavy. We also used our frozen hatch chilies instead of jalapenos.
Steamed the sweet potatoes, made a giant pot of black beans, and mashed them together with a potato masher. Stuffed them in tortillas, froze most of them, baked ours while we were stuffing/freezing the lot.
Pretty yummy.

Feijoada
Colorado Cache, pg 158. Basically followed the recipe:
- Quick-boiled the black beans instead of soaking overnight
- Used about 2 lbs sausage (mix of smoked sausage and mild brats) and no salt pork.
Of course, had the rice with it (pg 218). We also made the spicy red onion habanero salsa from Moosewood (pg 359).
We haven't eaten it yet, but it sure smells delicious!

Callaloo
Mosewood low-fat, pg 105. Pretty standard delicious. We more or less doubled it. And it made a whole bunch, not surprisingly, so we had to use the big all-clad pot. Made some corn bread to go with it. Yum.

Savannah Beans and Greens Soup
Moosewood lowfat, pg 104. Add carrots. Black-eyed peas, collards or kale, tomatoes. Serve over the rice instead of adding the rice to the soup.
We're making it tonight, so stay tuned for any updates.

Vegetarian Feijoada
Moosewood lowfat, pg 158. Pretty delicious as usual. Managed to burn the first batch of black beans while I was in with Julia. Pressure-cooked the next batch. Not bad, but not as good as they could have been. Used 3 habaneros for the sauce. mmm mmm spicy!
