Rachel Ray, #340. 2 lbs gnocchi, added mushrooms. Turned out a bit soupy which was good.

Chicken Cacciatore Stoup
http://letnacholibre.blogspot.com/2015/02/chicken-cacciatore-stoup.html
Note the potatoes comment. Also had a crock pot whole chicken that we shredded and used half of for this.

Indian Spiced Vegetables
http://letnacholibre.blogspot.com/2013/08/indian-spiced-vegetables.html
Definitely was not a 30 minute meal this time. But was pretty tasty.

Chicken Cacciatore Stoup
http://letnacholibre.blogspot.com/2015/02/chicken-cacciatore-stoup.html
We cooked the taters for quite a while at the beginning - almost until tender. Much better that way.

Springtime Bows
http://letnacholibre.blogspot.com/2016/03/springtime-bows-with-asparagus.html
Did this using Manchego cheese. Grill-panned some chicken to go with it. Yum.

Springtime Bows with Asparagus
Rachel ray, pg 266. Recipe 305. This is pretty tasty. Asparagus, add mushrooms, peas, prosciutto, farfalle. Asparagus was pretty good, although we're a bit early for local.
We've made this quite a bit in the past, but not recently.

Chicken Cacciatore Stoup

Turned out pretty well. Again, taters needed more time than she said.

Chicken Cacciatore Stoup
Rachel ray, pg 61, recipe #68. Haven't made this in a while. It's pretty tasty. Mushrooms, bell pepper, celery, chicken of course.
Of course you have to serve it with crusty bread and vino.
Note: cook the potatoes more so they're almost ready at the beginning.

Pumpkin Polenta with Spinach and White Beans
Rachel Ray, #211. We used quick-cooking polenta, and the texture of the polenta was not nearly as good.
Mostly followed the recipe this time.

Ginger Vegetable Chicken Noodle Bowl
Rachel Ray, pg 75. Turned out pretty well. We had fresh stock so we used 8 cups, and then added a bit extra of everything else. I may have put too much 5 spice on it though. Shredded the carrots in the food processor, which was ok but probably would have been better to have longer-shredded carrots. Vermicelli is foolish. That is all.

Chicken, Corn and Black Bean Stoup
Rachel ray, pg 89. Recipe #99. This turned out ok. Was a little plain, and the chicken ended up getting chewy. Next time, brown the chicken and take it out, and then sautee the onions and peppers for a bit before adding the chix back in.

Chicken Cacciatore Stoup
Rachel Ray, pg 61. Recipe #68. Basically followed the recipe exactly. Was pretty satisfying. The taters were old, and they needed way long to cook for some reason. Peppers, mushrooms, chicken, tomatoes.

Pumpkin Polenta with Spinach and White Beans
Rachel Ray, recipe #211. Made it differently than last time, in that we followed the directions instead of making it more like kale and cannellini (bigger onions, no wine). The onions were a bit undercooked. It's definitely better to make the onion smaller and add some wine after the onions are ready.
One day we'll find quick-cooking polenta. Mark my words.

Pumpkin Mushroom Sausage Pasta
Rachel Ray pg. 24, recipe 27.
This was delicious. Sausage, mushrooms, pumpkin purée, cream. Didn't have fresh sage though. Finally Julia doesn't get all the pasta.
