Turkey Chili

1 lb turkey
2 cans beans (pinto, kidney)
Mushrooms
Red peppers
Carrots
Celery
Onion
Garlic
28 oz diced tomatoes (or more)
Oregano
Cumin
Cayenne

Brown the meat (add spices) and remove.  Dice the veg fairly small and sautee for a while.  Add spices.  Add the meat back with the beans and the tomatoes and simmer for 20 or so.
