Ratatouille

Sheesh where did time go??  Anyway

Roasted potatoes in small dice. Roasted eggplant with squash in small dice. Sauteed an onion and shallot for a while, then diced a bunch of tomatoes and added it to the big pot.  Oregano, basil. Simmered for a while. Added the veg as they were done. Pasta too.
