Green Chili Chicken Tacos

Pasta e Fagioli
Ingredients
2 tablespoons olive oil
1 small yellow onion chopped
1 medium carrot chopped
1 celery stalk chopped
3 cloves garlic minced
2 bay leaves
3 (15 oz) cans diced tomatoes
2 (14.5 oz) cans vegetable broth
2 (14 oz) cans cannellini beans, rinsed and drained
1 small parmesan rind
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon dried rosemary
Dash of crushed red pepper
1 cup dried ditalini or other small pasta
1/4 cup chopped flat-leaf parsley
Grated Parmesan cheese for serving, optional
Instructions
In a large pot, heat the olive oil over medium high heat. Add the onion, carrot, celery, and sauté until softened, about 5 minutes. Add the garlic and cook for an additional 2 minutes. Stir in the bay leaves.
Add the tomatoes, vegetable broth, beans, and parmesan rind. Stir in the thyme, basil, rosemary, and crushed red pepper. Season with salt and black pepper. Let simmer on low for about 15 minutes.
Stir in the pasta and turn up the heat to medium. Cook until pasta is tender, about 8-10 minutes. Stir in the parsley. Remove the bay leaves and parmesan rind.
Ladle into bowls and serve with grated Parmesan cheese, if desired.
Note-for gluten-free, use gluten-free pasta. We like to serve the soup with crusty bread or garlic bread.

Chorizo, Potato, Mushroom, Greens Tacos

Sausage and Sun Dried Tomato Pasta OnePot
Turned out pretty good.
Ingredients
8 oz sweet Italian sausage
1 Tbsp olive oil
2 cloves garlic, minced
1/2 lb frozen broccoli florets
2 cups chicken broth
1/3 cup sun dried tomatoes
8 oz pasta (any small shape)
Pinch of red pepper (optional)
1/4 cup grated Parmesan
Instructions
Add the olive oil and sausage to the skillet and cook over medium heat until browned. If using links, cook them until browned on the outside and firm enough to slice, then slice into medallions, return to the skillet, and brown on both sides. Transfer the cooked sausage to a clean bowl and drain off all but about 1 Tbsp fat from the skillet.
Add the minced garlic and frozen broccoli florets to the skillet. Sauté over medium heat for 3-5 minutes, or just until the broccoli is bright green and no longer frozen. Transfer the broccoli florets to the bowl with the sausage.
Add the chicken broth to the skillet and stir or whisk to dissolve the browned bits off the bottom of the skillet. Slice the sun dried tomatoes into strips and add them to the broth with the pasta and a pinch of red pepper flakes. Stir, place a lid on top, and turn the heat up to medium high. When the broth begins to boil, give the skillet a quick stir, replace the lid, and turn the heat down to low or just above low so that the broth maintains a simmer.
Simmer the pasta and sun dried tomatoes for about 7 minutes, stirring every couple of minutes, or until the pasta is tender and most of the liquid is absorbed. If the pasta becomes tender before all the broth has been absorbed, simply let it simmer for the last couple of minutes without the lid.
Once the pasta is tender and only a small amount of thickened liquid remains in the bottom of the skillet, add the cooked sausage and broccoli back to the pasta. Stir to combine and sprinkle the grated Parmesan over top. Serve immediately.

Made a huge thing of fried rice. 2 cups brown rice. Scrambled 5 eggs. Onion, garlic, ginger. Then lots of veg. Green beans, carrots, snap peas, etc. Teriyaki meatballs.

Salmon Bake
Fry some ginger and garlic for a bit. Add curry powder and cook a minute. Add coconut and lime juice. Simmer for a while until it reduces a bit.

Ramen Stuff
So yea, having a child is hard. We've made some things but who knows what.
Anyway, this is a recipe that started with the Coopers.
Use a big pot not a frying pan.
Browned a big package of burger. Remove from pan.
Cooked 5 packages of ramen according to directions. Discard spice packages.
Make the sauce:
Scallions and ginger in a good amount of oil. Then add garlic. Cook a bit then add tamari.
Put meat back in pan and add a bag of frozen veggies. Stir. Add ramen back in.
More tamari, rice vinegar and sesame oil.
We also roasted broccoli and put it in.

Next day served it with some egg noodles.
Made the eggs in the instant pot. Set them on the rack and added a half-ish cup of water. Pressure for 5, natural release for 5, then quick release and into ice water. Super easy to peel.

Pan fried some sausages. The colcannon is fancy mashed potatoes with greens.

Two pounds of potatoes, cut and boiled until soft.
On the side sauteed a leak and a small head of cabbage in a good hunk of butter and salt pepper until soft and looking good. Added 3 scallions and sauteed a few minutes.
Mash taters with milk and butter. Mix in greens.
Mound on plate with a butter-sized well in the middle.
